Hungry Girl’s Special Winter Soup
(makes 6 servings)
2 potatoes thin sliced
2 carrots thin sliced
1 large onion thin sliced
1 small turnip thin sliced
1 anise stalk chopped
5 garlic coves chopped
1/2 of cup of fresh chopped parsley
1 15 oz. can of Progresso cannellini beans
College Inn Light & Fat Free Chicken Broth – 48oz can
1/2 teaspoon of ground pepper
1/2 teaspoon of sea salt
It doesn’t take long to make!
In a large pot boil a cup of water with a dash of sea salt. Add sliced potatoes, carrots, onion, turnip, and chopped anise. Boil the vegetables until they become soft and potatoes create a thick broth. Add the can of Progresso cannellini beans. Stir for 5 minutes and add in parsley, remaining salt, and pepper to taste. Pour in the 48-oz can of College In Light & Fat Free Chick Broth. Simmer for 10 minutes and serve. It will be hot so be careful!
